Lamb - Hoggett - Mutton
From our flock of Shetland, Welsh Mountain and various other breeds with produce small batch, high welfare Lamb, Hogget and Mutton.
What's the difference?
Lamb, - the youngest meat from 'sheep' this is under 12 month old and has a mild delicate flavour.
Hogget - this is a little older, between 12-24 months has move flavour, yet is perfect for roasting and slow cooking alike
Mutton - our personal favourite, over 24 months completely underrated, beautiful flavour, stunning as curry, stew or steak.
